Five minutes with…Emily Miller

Emily Rose Miller, aka “Remrey” describes herself as kind, detailed and creative. Emily is currently studying at CIT Reid for her commercial cookery certificate III and patisserie certificate II. She’s been working very hard to achieve her goals, practicing at home, at work and training with her CIT teachers. She works as a Pastry Chef in Hao Chens restaurant Raku Dining, but has recently started a catering business independently called Emilyrose Catering.

Emily says she really enjoys the practical application of patisserie theory “to use techniques in creating unique dishes is my passion”. Working in the Japanese fine dining restaurant, Emily has been given the opportunity to get a greater understanding of the cuisine and use of specialised ingredients. She has high hopes for her new catering business and wants to then travel to learn new cuisines and specialised cooking techniques, one day hoping to do cooking classes with children.

Emily says competing at the Regionals last year and winning first place was exciting and a great opportunity, and this year she hopes to meet new people, challenge her knowledge in a competitive environment and grow her culinary skills and personal development.

“This is a great opportunity to represent teachers, employers and friends of Canberra at a national level. I am looking forward to meeting new people and understanding their philosophy. I hope to represent Canberra at an international level to create amazing memories in which I can grow upon.”
